This year, my family is celebrating Thanksgiving away from home. We’re hiking the Ocala Forest and some Central Florida back roads. Before we leave, I am planning an authentic Florida Thanksgiving with all the ingredients fresh from Florida. I have visited several local markets to find out what’s fresh and the menu is planned.
First, I am going to decorate my dining table with Florida in mind. Vases will be filled with fresh citrus, and shells will be placed at each table setting. I’ve gathered some Florida pine cones and placed them in wooden bowls throughout the house.
For an appetizer, I am planning some fresh sliced Florida red peppers with homemade hummus.
For dinner, what else but seafood? If we have any stone crabs in our traps, it’s a stone crab night. If not, I am going to bake a locally-caught whole red snapper.
When I serve seafood, I try to keep the rest of the meal light. Fresh Myakka City green beans with almonds, sliced Ruskin tomatoes, rice pilaf with fresh herbs, a Florida avocado & grapefruit salad and fresh biscuits with homemade orange marmalade.
So what’s for dessert? I have to finish off the key limes from my tree, so fresh key lime pie or a pound cake (key lime). And I still have Meyer lemons, so freshly baked lemon bars will be added, too.
I can’t wait to enjoy this celebration with family. Enjoy your Thanksgiving, and remember, keep it fresh from Florida when you can.
