A Delicious Recipe: Radish Crostini

Do you ever think of radishes when you think of comfort food? I certainly didn’t until I started experimenting with fresh, young Celesta and Watermelon radishes.

Radishes on toasted bread with butter and salt is a favorite French dish, long considered comfort food in France. They figured out that the best way to remove some of the ‘bite’ of radish is to combine it with sweet butter and salt. I’m so glad they did!

This recipe combines toasted whole-grain bread with flavorful herb butter, crispy radishes, and a sprinkle of finishing salt. SO delicious.

Radish Crostini

Ingredients

  • ½ stick unsalted butter, room temperature
  • 1 tsp. minced fresh parsley
  • 1 tsp. minced fresh chives
  • Zest of ½ lemon
  • Pinch Kosher salt
  • Few grinds fresh black pepper
  • 5 or 6 small-medium radishes (any variety)
  • 1 small/medium baguette (enough for 6-8 slices)
  • Flaky salt (Sea Salt, Maldon, Fleur de Sel)
  • Minced chives or parsley for garnish (optional)

Instructions

  1. Heat oven to 350 degrees.
  2. Combine butter, parsley, chives, lemon zest, salt/pepper in a bowl and mix.
  3. Wash and dry radishes, remove stem ends, finely slice with a mandoline or sharp chef’s knife; place in a bowl of water with ice cubes to keep crisp.
  4. Slice baguette (about 1") and place on a baking sheet; pop in oven 5-8 minutes until lightly brown; remove and cool.
  5. Spread a little butter on each crostini, add radish slices and a sprinkle of salt.
