Authentic Florida Vinaigrettes

When you are in the mood for something healthy, nothing beats Florida farm lettuce and a light, flavorful vinaigrette to complement the greens.  We have several recipes using Florida citrus -lemons, oranges and even grapefruit.  They add a certain tangy flavor to the dressing that shouts “fresh” for spring and summer salads.  Use them for marinades, too.

Florida Lemon Vinaigrette

This vinaigrette is our go-to choice for almost any night.  The fresh lemon juice completely enhances the fresh lettuce.  We usually triple the recipe so we have plenty on hand.

Ingredients 

1 Tablespoon fresh squeezed lemon juice (1/2 lemon)

2-3 Tablespoons extra-virgin olive oil

½ teaspoon lemon zest

1/2 tsp. of Dijon Mustard

1/4 tsp. salt

1/8 tsp. pepper

Pour the lemon juice in a bowl and add the olive oil, mixing with a whisk. Add Dijon mustard also whisking to emulsify. Mix in the lemon zest, salt & pepper.

Florida Orange Vinaigrette (we often use this as a marinade)

Just for something different, we change it up and use orange juice to add a different flavor.  This is a very light dressing. 

Ingredients

Juice of 1 large Florida orange

4 Tablespoons of rice vinegar

¼ Cup of vegetable oil

1 teaspoon of honey

Salt and pepper to taste

Pour orange, rice vinegar in a bowl and whisk in the vegetable oil.  Whisk in the honey and salt/pepper.

White Wine Vinaigrette

If we are making an extra-special meal, we’ll use this.  The wine adds some depth of flavor.

Ingredients 

1/3 Cup white wine

¼ Cup fresh squeezed lemons (2-3 lemons)

¾ Cup extra-virgin olive oil

1 teaspoon honey

¼ teaspoon salt

¼ teaspoon pepper

Pour the wine lemon juice in a mixing cup and pour in the olive oil, whisking. Then add the honey, salt and pepper. Whisk.

Soy Citrus Vinaigrette (we often use this as a marinade)

If we are making an Asian inspired dish and have a salad as part of the menu, we use this to complement the meal.

Ingredients

3 Tablespoons of fresh grapefruit juice

1 Tablespoon of low sodium soy sauce

1 Tablespoon of fresh lime juice (1/2 lime)

1 Tablespoon of rice vinegar

3 Tablespoons of Safflower oil

2 Teaspoons of honey

Add the first four ingredients in a bowl and whisk in the Safflower oil.  Add the honey and whisk.
